Sheet Pan Pancakes: The Greatest Life Hack

Not only are sheet pan pancakes really difficult to say ten times fast, learning how to make them was easily in my top ten favourite life hacks.

Are you ready to have your mind-blown? Without further ado I bring you, my new best friend, the sheet pan pancake.

One summer day, I was looking out my window and... just kidding, let's get right to it.

SHEET PAN PANCAKES Oven at 375. Parchment paper that pan. I used Kodiak Cakes mix for the added protein (I ain't got time to mess around with protein pancake recipes) but you can experiment with your own.

Fill the pan with about 2 1/2 cups of batter (it was about 1/2 in deep.) Stick it in the oven for about 12-15 minutes.

In the meantime, you can bring a pot of berries to a boil, reduce to a simmer while the pancakes cook. Take out the pancakes. They are done when they spring back after pressing your finger into the top. Cut with a pizza cutter and surprise your kids with square pancakes. (Theo said, "I don't care what shape they are. I'm just hungry.") Add some berry sauce and devour. And again tomorrow. And the day after. And bring for lunch. And eat for a snack. You get a pancake! And you! And you! And we can all eat at the same time!

Don't forget to take a picture and tag me on Instagram when you try them!
